Spiderweb Cheesecake Recipe | Halloween


Today is another recipe day.
This recipe was inspired by Sorted Food's blackberry webbed cheesecake but I changed it a bit. Here's how I made this halloween appropriate dessert.


You will need :




First, crush the digestive biscuits and stir in the melted butter. When it's well combined, spread it at the bottom of a lined spring form tin (about Ø24cm) and flatten it using the back of a spoon or a glass. Leave in the fridge to cool while you do the rest.

Crush the mixed berries with a fork and sweeten to taste with icing sugar. Use half of the mixture and spread it onto your layer of crushed biscuits and butter. Put it back in the fridge.

In a bowl, combine the cream cheese, sugar, lemon juice and lemon zest. You might want to add a bit more sugar depending on how sweet you like your cheesecake to be.

Spread the cream chese mixture onto your base (be careful not to smear red all over - try and keep it as white as possible).

Take the other half of your berry mixture and run it through a sieve to get rid of the pips. Add a little bit more icing sugar to thicken it slightly. Once you're happy with it, place it in a piping bag and draw a spiral on your cheesecake.

*The trick is to find the right pace for the right consistency. The runnier your mixture the faster you'll have to draw your spiral.

Once you have your spiral, use a toothpick and always starting from the middle draw lines to create the spider web shape.

Leave in the fridge to cool for about 3-4 hours and ENJOY !


Of course the flavours can be changed according to your taste. Sorted food made a plain cheesecake with blackberry sauce and a sponge base. I like biscuit base better and lemon is my favourite cheesecake flavour.

Maybe we could try a pumpkin swirl, on a cinnamon cheesecake with a base of speculos to make it even more halloweeny/automnal …
